It’s hard to get a healthy breakfast in when you’re trying to get your children to school on time. Growing up with two younger sisters, my mom always was running around the house in the morning. Whether she was scrambling to ensure we didn’t go back to sleep after she woke us up, finding a missing shoe, doing last-minute laundry or whatever else it is mothers do, she did it.
The point is: breakfast was often the least of her worries. However, rarely was there a day when she sent my sisters and me to school with an empty stomach. How did she do it? Here are some easy, quick breakfasts she whipped up that I still make today!
Sausage, Egg and Cheese Scramble
This was one of the more frequent breakfasts I had growing up, and now that I’m older and make it myself I can see why. All that’s needed is a tablespoon of butter, 2-3 links of pre-cooked breakfast sausage, 3 eggs, a splash of milk, and shredded cheese of your choosing (I do mozzarella or cheddar).
To make it, put your pan on medium heat and add the butter. While that’s heating, take your sausage and cut them into bite-sized pieces. Once the pan is heated up, toss the sausage in. While those sit, get your eggs and scramble together with a splash of milk to add some creaminess; pour this mixture into the pan and let everything begin to cook. After about two minutes, stir the egg-and-sausage mixture and when it’s about halfway done, add the shredded cheese and finish the cooking process.
This breakfast is filling, easy and delicious!
Cinnamon Oatmeal
Another classic breakfast with a fun twist for the kids is cinnamon oatmeal. You’re going to need 2 cups of rolled oats, 2 ½ cups of milk or water (whichever you prefer), 2 tablespoons of brown sugar, 2 teaspoons of cinnamon, a drizzle of maple syrup and (optional) bananas and blueberries.
First, pour in your milk (or water) in a saucepan and place on medium heat; bring to a near-boil. Next, pour the oats in, stir to combine everything, and remove the pan from the heat. Add the cinnamon and sugar and stir until the oats are cooked to your liking, drizzle some maple syrup, then serve. I like to add sliced banana and a handful of blueberries atop mine for some extra nutrients.
Almond Butter, Banana and Honey on Toast
Of the three, this is probably the simplest breakfast. What’s needed are 2 slices of whole grain bread, 2-3 tablespoons of almond butter, sliced banana and honey.
Toast your whole grain bread, take the almond butter and evenly spread it on the toast. Next, place your sliced banana on top of the toast and lightly drizzle honey on top. Voila! Breakfast is served.
