Make These Easy Homemade Pancakes From Scratch

If you can’t get to the store to buy pancake mix, you can easily make pancakes at home with ingredients that you probably already have in your pantry! Here is a recipe for easy homemade pancakes with whipped cream and strawberries.

Homemade Pancakes

Ingredients:

  • 1 Cup all-purpose Flour
  • 2 tsp baking powder
  • 1 tbsp of sugar
  • dash of salt
  • 1 cup milk of choice
  • 2 tbsp melted butter
  • 1 small egg
  • Optional: 1 tsp vanilla extract

Tip: If you have self-rising flour, you can use one cup of self-rising flour and exclude the baking powder from the recipe.

Directions:

In a large mixing bowl, mix all of your dry ingredients and set aside. In a small bowl, whisk together your milk, egg, melted butter and vanilla extract if you have it. 

Add your wet ingredients into your dry ingredients and whisk to combine. Do not over mix.

Set your griddle to medium-high heat, and coat the pan with butter or oil. Once your griddle is hot, spoon out your batter on to the griddle to form your pancakes, and cook for 2-4 minutes on each side, depending on the size of the pancakes. Once done, place the finished pancakes on a serving dish and continue making the pancakes until all your batter is gone. 

 

Fresh Whipped Cream with Lemon Zest

Ingredients:

  • 1 cup whipping cream
  • 2 tsp sugar
  • 1 tsp lemon zest 

Directions:

In a large bowl, add the cream, sugar and lemon zest. Begin to whisk the mixture vigorously for about 3-5 minutes or until the mixture forms stiff peaks. When your whipped cream can stand up on the whisk without falling off, you know that the cream is ready!

Assembly:

In the middle of a plate, make a stack of your homemade pancakes as high as you would like. On top, add a dollop of the fresh whipped cream. Finish with sliced strawberries on top of the whipped cream, and serve with maple syrup! Enjoy!
